Brazilian-Style Barbecue
                                                   with Spicy Onion Salsa

Ingredients:

Salsa:

  • 1 cup diced sweet white or red onions

  • 1 clove garlic, minced

  • 3 1/2 tablespoons finely chopped jalapeno peppers

  • 1/2 cup fresh lime juice

  • 1/2 cup fresh orange juice

Mix all ingredients together and store in refrigerator until needed.

Barbecue:

  • 4 boneless, skinless chicken breast halves or thighs (about 1 lb)
  • 2 cloves garlic, minced
  • 1/3 cup fresh lime juice
  • 1 lb. top sirloin of beef
  • 8 oz. pork link sausage or chorizo
  • 16 medium Monterey White or
  • Brown Mushrooms (8 ounces)
  • 4 skewers
  • Vegetable oil
  • Salt and pepper
     
Brazilian-Style BBQ w/Spicy Onion Salsa!
Preparation:

Layer chicken in shallow pan. Sprinkle with garlic and pour lime juice over all. Refrigerate up to 4 hours, turning occasionally. Cut beef into 1 1/2 inch cubes and uncooked sausages into 1 1/2 inch lengths. Thread chicken onto a skewer, beef onto another, sausages onto another and mushrooms onto a separate skewer. Cover and store in refrigerator.

Brush skewered meats and mushrooms with vegetable oil and grill over medium heat, turning frequently, until done, about 8-10 minutes. Place on serving platter and remove skewers. Salt and pepper to taste. Serve with salsa to spoon over.
