Turkey and Mushroom Kabobs
Another time, try cubes of beef instead of turkey

Ingredients:

  • 36 cubes (3/4-inch) cooked turkey roast
  • 1 cup Italian dressing
  • 1 can (8 oz.) pineapple chunks, drained
  • 1 large green pepper, cut into 1-inch squares
  • 1 pound (16 oz.) Monterey Clean N ReadyŽ Whole Mushrooms
  • 12 cherry tomatoes

 

Preparation:

Marinate turkey in dressing several hours or overnight. Thread 6 skewers by alternating turkey and pineapple with green pepper and mushrooms. Reserve marinade. Broil or grill kabobs. Brush with marinade during cooking. Cook about 7 minutes, 5 inches from heat. Turn. Cook 2 to 3 minutes. Place cherry tomatoes on end of each skewer. Cook 2 to 4 minutes longer or until vegetables are tender.
