Mushroom Tomato Antipasto

Ingredients:

  • 1 clove garlic, minced

  • 1/4 tsp salt

  • Dash pepper

  • 1/2 cup olive or salad oil

  • 3 firm medium-size tomatoes

  • 1/2 tsp basil, crushed

  • 1/2 lb. (8 oz.) Monterey Clean N ReadyŽ Sliced Mushrooms

  • 1 tbsp red wine vinegar


Preparation:

Stir garlic, salt and pepper into oil in medium-size bowl. Set aside.

Slice tomatoes. Season lightly with salt if desired. Arrange in overlapping rings on large platter. Sprinkle with basil.

Add mushrooms to seasoned oil. Toss quickly just to coat. Remove. Arrange around tomatoes. Drizzle remaining oil over tomatoes. Sprinkle salad with vinegar. Cover. Chill 1 to 2 hours before serving. If desired, garnish with parsley.

Note: When available, crushed fresh basil will add a very special aroma and taste to this salad.
