Napa Cabbage & Woodear Mushroom Salad with an Asian Vinaigrette

Ingredients:

1 head Napa Cabbage, julienne
1 bunch green onions, chopped
2 carrots, julienne
16 oz. fresh Woodear Mushrooms, julienne
1 T rice wine vinegar
1 T lemon juice
2 t soy sauce
1 t minced ginger
½ t minced garlic
½ t sugar
¼ t ground white pepper
1/8 t salt
1/3 cup Macadamia oil

 Procedure:

  1. Julienne the napa cabbage, carrots, and Woodear mushrooms
  2. Chop the green onions
  3. In a small bowl, combine the rice wine vinegar, lemon juice, soy sauce, ginger, garlic, sugar, pepper, and salt and whisk.
  4. Slowly add the oil in a steady stream, whisking
  5. Adjust seasoning to taste.
  6. Combine with the rest of the cut vegetables and mix together.
