Shrimp and Mushroom Bisque

A fine way to begin a meal

Ingredients:

  • 1 1/2 pounds small shrimp, clean and deveined
  • 1 cup water
  • 1 lb. (16 ounces) Monterey Clean N ReadyŽ Sliced Mushrooms
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 cup dry white wine
  • 1 chicken bouillon cube
  • 1 tsp salt
  • 1/8 tsp nutmeg
  • Dash cayenne
  • 2 cups light or heavy cream
  • 2 tbsp dry sherry or brandy (optional)
 


Shrimp and Mushroom Bisque!

Preparation:

Put shrimp and water in blender (a third at a time) and process until very finely chopped. Set aside. In large saucepan sauté mushrooms in butter until liquid evaporates. Remove from heat. Stir in flour to coat. Slowly stir in wine. Add bouillon cube, seasonings and shrimp mixture. Simmer, covered, 10 minutes. Stir often. Add cream and heat thoroughly. Do not boil. Add sherry or brandy if desired. Garnish with snipped parsley or chives.

Makes 7 (1-cup) servings
